Delicious gnocchi bake

This quick and delicious gnocchi bake is so incredibly fast and easy to put together, you almost wouldn't believe the result to be as incredibly tasty as it seriously is. Crunch and crispy at the top and wonderfully soft and creamy below, it combines the best cheese and pasta have to offer when they are united in feel-good recipes such as these. Every single time I make it, the dish is scraped clean to the last little bit of crunchy cheese stuck to the side... It's a true family (and friends!) favourite!

Perhaps best of all, is that every single ingredient of this delicious gnocchi bake can be taken from the freezer, the pantry, or can be kept in the fridge for a longer time. So if you make sure you always have the ingredients in house, you will be able to put this dish on the table with minimum efforts (and great results).

Here’s the recipe for 8 people:

A delicious gnocchi bake with spinach, cheese and pesto

Ingredients:

  • 1 jar (185 g) of Pesto alla Genovese

  • 2 packages of 500g Gnocchi de Patate (the variety that only takes 2 minutes to cook)

  • 175 g grated cheese

  • 450 g cubed frozen creamed spinach

  • 400 ml milk

  • 20 g powdered parmesan

  • a handful of breadcrumbs

Preheat the oven to 180°C Place the gnocchi in an oven dish and mix with the grated cheese the cubes of frozen spinach. Combine the pesto with the milk and pour over the gnocchi mix. Sprinkle with the breadcrumbs and the powdered parmesan. Bake for 40 minutes or until bubbly brown and crispy.
