A delicious and easy recipe for an oven fish dish

This oven fish dish is one of our children's favourite recipes (and mine too!). It is easy to make and delicious! I tend to make it when I'm not majorly inspired to cook, or when I have my mind on other things, but when I still feel like something light and healthy.

Here's what I do (feeds our family of 6):

Preheat the oven to 180°C / 350°F . Put around 800 to 1000 g of fresh fish fillets in an oven dish (white fish, salmon, shrimps, etc). Sprinkle with olive oil and turn the fillets around a few times so that they are coated in the oil. Add some fresh ground pepper and sea salt. Rinse two heads of broccoli and cut of the flowerets (cut bigger flowerets in half) and divide over the fish. (I don't use the stem of the broccoli, but I peel it and cut it into sticks for the kids (and me) to eat raw while I'm cooking. It is super tasty!) Then, rinse around 20 to 25 cherry tomatoes and divide them over the dish. You can use courgette or carrot (in fine slices) as well. It's all so yummy. Sprinkle the dish with more olive oil and some salt and pepper, and put in the oven for about 30 minutes.

In the meantime, cook some rice, grains or pasta to eat with the fish. When the fish is done, divide some lemon wedges over the dish and serve. Done! There will be plenty of delicious juice of the fish and the veggies in the bottom of the dish so you might want to eat it with bread as well.
